Frozen Meals

That dear readers, is a peek into my freezer – portioned and prepped meals, ready to roll!

Yesterday, The Accountant and I dipped our toes into the world of Once A Month Cooking. We hit the grocery store, and then spent about two and half hours in the kitchen prepping for the week. Dinner for tonight, chicken breasts with mashed yams and steamed asparagus is cooked. Dinner for tomorrow, beef stir fry, is prepped so I all I have to do when I get home is toss the beef with the veggies in a frying pan (and make rice if I’m feeling ambitious). An additional three main courses are portioned, prepped and frozen. We ended the afternoon by making baked cod and potatoes, which we ate for dinner last night.

Two and a half hours’ work yielded seven meals (not a whole month’s worth, but a great start!) - and I wouldn’t even call it work. The Accountant and I had a good time. We cleared the afternoon, so we weren’t rushed, and it was so much more fun cooking together.

I am totally sold on this idea.
